A Day in the Life of a Grease Trap Technician: From San Francisco to Healdsburg to Walnut Creek & Beyond

At North Bay Restaurant Services, our team is up before dawn—servicing grease traps and supporting commercial kitchens across the Bay Area. From the early-morning energy of San Francisco to the expanding culinary scene in Walnut Creek, our technicians keep things running behind the scenes so chefs and restaurant owners can focus on what they do best. 2:00 A.M. – The Day Begins

Each shift starts at our yard around 2:00 a.m. Our technician checks the day’s route, gathers keys and access codes, and preps the truck. With stops scheduled from San Francisco to Solano County, each day brings a new mix of locations—urban, suburban, and everything in between.

With a fully equipped service truck—custom-built for grease trap pumping, hydrojetting, container deliveries and wastewater reclamation—they hit the road before most people are out of bed.


On the Road: Every Day is Different

No two routes are the same. Some days include back-to-back stops at established restaurants in San Francisco; others involve first-time cleanings at new kitchens in Contra Costa County. At each stop, the process is consistent:

  • Unlocking and securing the property
  • Measuring FOG (fats, oils, and grease) levels
  • Pumping and cleaning the grease trap
  • Taking before-and-after photos
  • Uploading reports to our customer service app

Restaurant managers can access every service report, FOG measurement, and compliance recommendation—all from their phone or desktop.


Morning Energy in the Kitchen

By 5:00 or 6:00 a.m., many kitchen teams are already arriving on site prepping for the day. Our technician often chats with chefs and staff—many of whom they see every week. These quick check-ins build trust and help us catch potential issues early, like grease backups or the need for hydrojetting.


Clean Wrap-Up and Ready for Tomorrow

After 15-20 stops, the technician returns to our yard, safely offloads the collected grease, sanitizes equipment, closes out reports and checks in with our office team. Then it’s time to rest—and get ready to do it all again tomorrow in a new region.
